Why doesn't honey spoil?
When archaeologists excavated ancient Egyptian tombs, they found something extraordinary: pots of honey that were over 3,000 years old — and still edible. The oldest honey ever found dates back approximately 5,500 years.
Honey's remarkable preservation comes from its unique chemistry. It has very low water content, high acidity, and contains hydrogen peroxide produced naturally by bees. These properties create an environment where bacteria and microorganisms simply cannot survive. As long as honey is sealed and kept away from moisture, it can last indefinitely.
